Easter Breakfast Recipe

Easter Breakfast Recipe to make Spring of 2019. Here are the steps to making an effortless Easter breakfast recipe for the family when hosting breakfast or brunch this Easter.

Our family only has a few annual traditions and go-to recipes that we make at special times of the year.  One of our newest additions, thanks to an addition from our daughter-in-law, Christa, we now make this wonderful recipe for Easter morning with our family.  The bonus here is that it helps us with having too many eggs on-hand.  When you raise your own hens on the farm, you will find yourself asking, “hmm, what to do with too many eggs?” 

A few reasons why we love this recipe are:

  1. It’s easy to make
  2. It needs to be made the night before.  This allows for quality family time in the morning
  3. Takes minimal time in the morning
  4. It requires 8 eggs
  5. And everyone loves it

Casserole Ingredients

  • 8 eggs
  • 2 cups of cream (you decide which one, we have used 35% and half & half and both work well)
  • 1 cup of milk
  • ½ cup 100% Pure Maple Syrup
  • 1-½  tsp cinnamon
  • ¼ tsp salt
  • 1 tbsp vanilla
  • 1 pkg of 6 bagels cubed.  Try cinnamon raisin bagels.  Bread can substitute bagels.
  • Butter for greasing 9 x 13 casserole dish

Topping Ingredients

  • 4 tbsp flour
  • ½ tsp cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp cold butter

Instructions

The night before –

  1. Grease casserole dish with butter
  2. Cube your bagels
  3. Mix all Casserole ingredients together in a large bowl until well mixed
  4. Place cubed bagels into greased casserole dish
  5. Pour mixed ingredients over the cubed bread
  6. Cover and let soak overnight in the fridge

Now, we will prepare the Topping for the morning –

  • In a separate bowl, combine all the topping ingredients together.
  • Mix only to a crumble.  Careful to not over mix
  • Cover and keep in fridge overnight
  • Enjoy your evening!!

The next morning –

  1. Add the topping mixture to the casserole.  Just place on top, do not mix in; this will be a crumble topping.
  2. Cook in the oven at 350 degrees for 30 to 40 minutes.
  3. Top with 100% Pure Maple Syrup and add fresh berries.
